In these few days I have been out cooking for a group of stagist doing a dancing Workshop "Restless Peace” with the american guest star Nita little (from April 25 to May 2, 2008).
This intensive workshop for them it has a great experience of cooking.....trying to feed dancers that were mostly vegetarians!
What I did? Oh my God I have just prepared thousand variations of soup, risottos and lot of vegetables as cougettes, peas, broad beans, tomatoes......
So here a good recipe for weight watchers people that love food without using extra fats always enjoying what's in season!
CREAMY FAVA BEANS SAUCE
3 cups of fava (broad) beans, shelled
3 tbs od extra virgin olive oil
1/2 minced red onion
1 minced clove garlic
1/2 cup of water or brouth
salt & freshly ground black pepper
1 teaspoon chopped fresh flat-leaf (Italian) parsley
1/2 tsp of wild fennel
using a large pan and heat the olive oil over medium heat, add onion and garlic for few minutes, don't let the garlic brown! then add fava beans and stock bringing to a boil. Reduce the heat to low, cover and simmer, shaking the pan gently from time to time, until the beans are tender, about 15 minutes.
Once cooked use a blender to make a sort of cream....add salt, black pepper, wild fennel and enjoy!
This cream is good to dress your favorite pasta, rice and even a croutons dripping extra oil on top. Sprinkle with the parsley or basil and serve immediately.
