Chocolate Pasta
My friend from New Zealand, Jane Shearer teacher and owner of the Cooking School "Duck under the table" wrote me a nice email asking about Chocolate pasta.
"Hope all is going well with you and your cooking classes, TV showings and
bar are all a stunning success!!!!!!!! We have started to get winter here and hence Geoff has been picking lots of wild mushrooms which I cooked into a pasta sauce to have with the Chocolate pasta which you gave me last year.Oh my god it was divine and now I want some more and alas can't find any to buy here and every time I ask for it the retailers look at me as if I'm half mad. It was chocolate pasta wasn't
it? Also one of our daughters has a boyfriend that goes hunting for wild boar
so I really want to try it with the pasta"
My reply to make chocolate pasta dough using bitter chocolate powder ( do not exceed)so you can make the best chocolate noodles.
400 gr of flour 6 tbs of chocolate powder,3 eggs and bit of
salt....and extra flour to work your pasta!If you use regular spaghetti or penne or whatever pasta shape you can add
chocolate powder while you are mixing on the flame...remember to maker the
sauce ahead using always pork meat, wild boar meat and minced meat ( no
tomatoes).

Eppure ricette con il cioccolato fanno parte della tradizione umbra e non solo. Primi e secondi piatti eccellenti. Alcuni anni fà ebbi l'occasione di assaggiare il cinghiale al cioccolato e ti devo dire che era gustoso....ora proviamo anche le tagliatelle

20 g di cacao in polvere amaro
300 g di farina
3 uova
sale
per il condimento
burro e formaggio grana grattugiato
Che salsa consiglieresti?
Wild boar is fine but how can I get it here???
